Fried eggplant is a simple downhome recipe but the twist this Gluten Free Fried Eggplant is easy and delicious cooking. Usually this is made with flour but this time I used coconut flour and it turned out just fine.

1 egg plant
1 1/2 cup coconut flour
2 eggs
oil
salt and pepper to taste

In a pan put in about 1/8 inch oil, heat on medium.
Whip up your egg and season your flour in two separate bowls
Cut up your egg plant in 1/4 inch thick slices

 

Dip your egg plant in egg and then in the coconut flour

 

Fry in the pan so that they are brown on both sides

 

When they are done you can set them on a plate lined with a couple of paper towels.

 

ENJOY your gluten free fried eggplant! My little ones and I like to have ketchup on it. My husband on the other hand likes Sriracha, which is way to hot for me!
 
 
Just a note: I did find that after two rounds of cooking I needed to clean out the pan and use fresh oil. I believe this is due to the coconut flour. Just wipe out your pan with a collection of paper towels and heat up more oil.
