Fried eggplant is a simple downhome recipe but the twist this Gluten Free Fried Eggplant is easy and delicious cooking. Usually this is made with flour but this time I used coconut flour and it turned out just fine.
1 egg plant
1 1/2 cup coconut flour
salt and pepper to taste
ENJOY your gluten free fried eggplant! My little ones and I like to have ketchup on it. My husband on the other hand likes Sriracha, which is way to hot for me!
Just a note: I did find that after two rounds of cooking I needed to clean out the pan and use fresh oil. I believe this is due to the coconut flour. Just wipe out your pan with a collection of paper towels and heat up more oil.
